Chinese Fried Chicken Rice is an excellent delicious food which can be served either as a main dish or side dish. Chinese Fried Chicken Rice is a great
alternative to steamed or plain rice. Very simple to make yet wonderful in taste. It is made from steamed rice stir-fried in a wok with sauce, fresh or frozen vegetables, egg and
chicken.
Ingredients:
Cooked rice: 2 cups (basmati / long grain)
Chicken boneless skinless breast: 1 lbs. (cut into small pieces)
Chopped Onion: 1 white onion
Ginger: 1 TBSP (long slices)
Ginger: 1 TBSP (small chunks/dice)
Chopped garlic: 4 cloves
Chopped carrots: 1 cup
Green sweet peas: 1 cup
Chopped green beans: 1 cup
Lima beans: ½ cup
Yellow corn: ½ cup
Eggs: 2 (1 Omelet / 1 to be cooked with vegetables)
Chili garlic sauce: 2 TBSP
Soy sauce: 2 TBSP
Oyster sauce: 2 TBSP
White black pepper powder: 1 TSP
Salt: 1 TSP
Black pepper powder: 1 TSP
Olive oil: 6 TBSP
Method:
Sprinkle 1 TBSP Olive oil on your cooked rice mixed with your fingers to remove clumps. Keep it aside.
Heat 2 TBSP Olive oil in a wok. Add ½ TSP salt and fry the breast chicken pieces until they turn to golden brown. Transfer in a bowl.
Heat another 2 TBSP Olive oil again. Sauté garlic, ginger and then onions for 2-3 minutes until they turn to slightly golden brown.
Add chopped Carrots, Green Beans, Sweet Peas, Lima Beans and Yellow Corn. Cook until they are soft and tender. Don’t overcook them.
Add ½ TSP salt and mix it well
Add breast chicken pieces and combine thoroughly.
Beat an egg slightly.
Push the cooked vegetables to all side of the wok and make a room in the middle and add 1 TSP Olive Oil then add the beaten egg.
Scramble the egg and then mix up with rest of the vegetables and breast chicken meat.
Also add Chili garlic sauce, soy sauce and oyster sauce, mix it well.
Now add cooked rice and stir fry for 3-4 minutes over medium heat/flame.
Add 1 TSP white black pepper powder and 1 TSP black pepper powder. Mix it well.
Add Scallion (green onions), mix it well. Fried Chicken Rice is ready to serve.
Garnish with Cilantro, Tomato and Egg Omelet.
TIPS:
It is suggested to use cold, left-over rice 1 day old because it does not contain any moisture and reduces the highly chances of getting wet and mushy Fried
Rice. If you have to make it right away then – spread the freshly cooked rice on a plate or baking sheet and keep it in the air to remove moisture. Then refrigerate the rice for ½ hour to 1 hours
before cooking.
Another important TIP is to use long grain rice (Basmati or Jasmine) as it comes out fluffier and less sticky then other types of rice.
Make sure that the rice is not overcooked.
You can use any vegetables of your choice or even you can use mixed vegetables.
Lastly to make it delicious use only white breast boneless/skinless meat only.
